Loaded Potato Soup

I think about this soup around once a week. It’s full of flavor, hearty, and we’re going to pretend the cheese and cream aren’t there so we can say it’s healthy. This Loaded Potato Soup is full of veggies and cheesy goodness. It’s easy and you can have it done within 45 minutes if you’re pretty good at chopping up vegetables quickly. The kids love it, my mother-in-law loves it, and so does my husband. It’s a win.

Our Loaded Potato Soup recipe makes enough for around 5-6 people that are having one bowl. I’d definitely double it if you have a large family… or if you just really like potato soup. I have to eat at least two bowls at a time. 

This recipe can easily be made vegetarian. I’d substitute the beef stock for vegetable stock and leave the bacon out. Toast the vegetables down in a considerable amount of butter, maybe 3-4 tbsp. 

Ingredients for the Loaded Potato Soup

  • 5 Potatoes 
  • 2 Celery Stalks
  • 2 Finely chopped carrots
  • 1 Yellow Onion
  • 5 Green Onions chopped
  • 3 Cloves of Fresh Garlic
  • 6 – 7 Slices of bacon finely chopped
  • 3 Cups of Beef Stock (more depending on preferred thickness.)
  • 2 Cups of Heavy Cream
  • 5 Tablespoons of Flour
  • Garlic Powder
  • Onion Powder
  • Smoked Paprika
  • Salt
  • Pepper
  • As much cheddar cheese as your heart desires. 

Instructions

uncheckedCube 4-5 potatoes, I prefer to leave the skin on. Soak the potatoes in cold water while the bacon and vegetables cook down.

uncheckedDice up vegetables and set aside.

uncheckedCook the finely chopped bacon until crispy in a big pot. Remove the bacon, leave the grease, and then cook the yellow onion and celery down. After onion and celery are cooked through, add the garlic to the pot. 

uncheckedAdd the spices listed above and toast them down. 

uncheckedThen add 5 tbsp of flour to the pot and stir it till everything is coated. 

uncheckedAdd 3 cups of beef broth (or more if you like thinner soup), 2 cups of heavy cream, the potatoes, and boil until potatoes are soft. 

uncheckedOnce the potatoes are fully cooked through, mash them slightly. This creates smaller, bite sized chunks.

uncheckedAdd cheddar cheese to your liking, mix in your bacon, and garnish with the green onion.
